Solstice dā Hiver
Solstice dā Hiver in a special collaboration we did with our friends at Nocturnem Draft Haus.
Using a old school mash technique, we mashed the beer on hay. From there we send the beer to our coolship to cool overnight. In the morning we pitched a old world Saison strain into the coolship then moved the beer over to red wine puncheons and a fresh gin barrel that still was coated with the herbs from the gin.
We then aged the red wine puncheon portion on cranberries. After which we then blended the red wine and gin barrel portion together to make this fantastic winter Saison. Like most of our historically inspired beers the beer was also conditioned in the can.
Crushable, not to sour, subtle cranberry notes with a finish of gin and a touch of Brettanomyces like funk. Complex yet approachable.
