Ramble On Gose
This is a historical recreation of the original Goslar style Gose, with a bit of a twist.
We cooled the beer overnight in our coolship with an abundance of edible flowers we both grew, and some wildflowers we gathered around our farm. We also added a unique flower genus of yeast to the mix. This particular yeast doesn’t ferment the beer out entirely, it just adds interesting pre cursor chemicals into the mix for the yeast and bacteria caught in our coolship to use.
The resulting beer is an incredibly crushable gose with less acidity and salinity than you may be used to. The flowers add a bit of background aromatics that really meld well with the wood character from the French oak puncheons in which we aged the beer.
Fermented with spontaneous inoculation and Metschnikowia reukaufii found on flowers outside OBC’s brewery
