Historical Grisette
Our Historical Grisette. This beer is a crushable 4.1% ABV Saison mixed culture including Brettanomyces isolated from Brouwerij Boon Vat 110 by Sidereal Labs. Cans and kegs are both naturally conditioned.
This is as close to a historically accurate version of the style we could produce. The beer is mashed on a bed of hay, and fermented/aged in French Oak Puncheons. We taste incredibly smooth, muted saison phenolics with background notes of hay, fruity Brettanomyces esters and wildflower honey.
