Blanche de Cambrai
Our Historic Blanche de Cambrai is a mostly forgotten style, but was once brewed by many in the Nord Region of France. Unlike Biere De Garde, or traditional white beers being made in Belgium, this beer was hopped at a much higher rate and barely boiled if at all. We used rustic 6 row malts in the mash, combined with one of our Saison Brettanomyces blends similar to our Historic Grisette. We also added fresh sumac harvested from our farm to the whirlpool instead of traditional Belgian spices.
The resulting beer pours a soft hazy golden hue, with intense aromatics of freshly muddled wild blueberries and honey. This is an extremely dry and refreshing beer with tasting notes that carry over from the aromatics; notes of freshly smashed wild blueberries mingle with subtle tartness and refreshing white wine like character.
Fermented with Sidereal Labs’ Old World Saison strain II and Brettanomyces isolate 87
